Pork and pineapple tacos

  • Canned pork
  • Dried pineapple
  • Onion
  • Tomato
  • Radishes
  • Canned corn
  • Lime
  • Cheese
  • Tortillas
  • Seasoning

We absolutely love this meal. It’s a little bulky to pack, but so worth it.

Fry the onions, pork and seasoning in oil. For this trip we bought a prepackage mix of tangy cilantro and pineapple seasoning, but found it to be too salty. Next time we’ll stick to our favorite- blackening seasoning. While you’re frying the meat have a friend cut the dried pineapple into small chunks and put in water to hydrate. Cut up other veggies and cheese. Add the pineapple to the pork and onions after it has hydrated (Don’t throw out the water, drink it. Its delicious!). Add corn and fry until blackened on edges. Remove everything from your pan and fry tortillas in oil.

Make tacos and enjoy!

Tasty tip- with any packaged meat we like to fry it up in oil and seasoning even though it’s already cooked. If you get it to char just a bit and you would never know it came from a can.
