This is really simple and also really satisfying. It us a staple in our lunches whether we are kayaking, hiking or just road tripping. Pick a meat that is flavorful and shelf stable. We have peach bourbon jerky. We find that hard cheeses like gouda will last for weeks in my cooler/day hatch as long as we keep it out of the sun. A good mustard is what really takes this meal from filling to delicious. We are using a spicy honey mustard. Make sure you find a crisp apple. They last longer and you will really appreciate the freshness of fruit several days into your trip.
